In Canada, there are standard commercial dishwashers like undercounter dishwashers, or more powerful units like conveyor dishwashers, or more specialized units like glass washers. No type of machine is necessarily better than any other, but there is a perfect machine for each job.
The primary method of ranging how powerful a dishwasher is, is to see how many racks it can do an hour. The number of racks a commercial dishwasher can clean an hour depends on the length of its cycle, and should only be taken as an estimate. The commercial dishwasher may have different cycle lengths, and depending on the speed of your worker, the amount of racks your dishwasher can clean an hour may vary.
There are two different rinsing mechanisms for commercial dishwashers: low temp or high temp. The low temperature wash in commercial dishwashers uses a chemical additive, instead of extreme temperatures to sanitize dishes. Low temp dishwashers cost less the purchase and to operate, but do not clean off grease and lipstick as well as high temp machines. In certain cases low temp dishwashers can damage flatware. You will also have to restock the chemical used to sanitize dishes.
High temp commercial dishwashers use a booster heater to increase the water temperature to around 195 F, which sanitizes the dishes.

Pre-rinse your dishes before loading your commercial dishwater. Once rinsed, these are the best practices for loading your commercial dishwasher.
- Plates: Place your largest plates at the back and your smallest plates at the front of your rack.
- Glasses & Cups: Most commercial dishwashers have a special loading section for glasses and cups.
- Stainless Steel Flatware: Pre-soak stainless steel flatware with a pre-soaked detergent and water. Flatware only needs to presoak for a few minutes before you place them on a flat rack for rinsing. Once rinsed, insert your flatware into the special baskets with their handles facing down. Insert the flat rack into your dishwashing machine. Flatware should be washed twice and left to air dry.
Water Pressure And Rinse Booster Pumps

All commercial dishwashers use powerful water jets to thoroughly clean their loads. Your machine will reduce with low water pressure.
There are many factors that could affect water pressure. A single wash basin could harm your dishwashers effectiveness if theres not enough pressure. Generally, commercial dishwashers require water pressure of around 2 bar to perform at their very best.
It is extremely important to check your water pressure before buying any commercial dishwasher. If there is insufficient pressure, you should look for a machine with an internal rinse booster pump. These can also be fitted externally if needed.
TIP: Looking for a simple way to test your water pressure? Use the thumb test cover the spout of a tap with your thumb and turn on the water. - Wash silver and stainless steel items in separate loads. If thats not possible, keep silver cutlery in a separate section of the dishwasher
- Pre-rinse food off cutlery and utensils. Acidic or salty residue can quickly seep into microscopic holes in stainless steel

- Check for excess dishwasher salt if you have a water softener fitted this could also be causing rust
Gravity Drain Or Drain Pump
Commercial dishwashers need to dispose of dirty water quickly and efficiently during the wash cycle using a dishwasher drain hose. To do this, they drain it away using either gravity or a powered pump. If the dishwashers waste outlet is higher than the drain standpipe, a gravity drain is sufficient. However, if the outlet is below the standpipe, a drain pump is required otherwise, your dishwasher wont drain. This diagram shows the difference between the two types.
Many dishwashers come with an integral drain pump already included. Alternatively, an external drain pump can be fitted. Before purchase, check the planned position of your machine. Assess the dishwasher plumbing situation by checking where the drain is in relation to the units waste outlet.
In some cases where the outlet is slightly lower, a gravity drain may still be suitable. If you can place the machine on a compatible dishwasher stand to raise its height. This solution will also make it more comfortable and easier to access for your staff.
